How to make it

  • In a medium bowl, mix the eggs and oil together with a fork. Add as much of the flour as needed to make a soft, but no longer sticky, dough. If you add the whole 2 cups and it's still sticky, add some more. Gather the dough into a ball and knead on a floured surface until resilient, 5 to 10 minutes. Cover and let rest for 30 minutes.
  • Roll as thin as possible on a floured surface. Make sure the dough isn't stuck to the surface and leave it to dry for 15 minutes, turning once. It should be just dry enough so that it won't stick to itself when rolled. Either roll it up loosely and cut across the roll or cut the sheet flat with a knife or cutting wheel.
  • Cook like store bought.
