Orange Shortbread Recipe
This was a favourite of mine when i was younger especially as i could make it myself. It gives a zingy twist on the usual shortbread.

Ingredients
  • 100g softened butter
  • 50g caster sugar
  • Grated zest of 2 oranges
  • 100g plain flour
  • 50g ground rice (optional)

Directions
  1. Preheat oven to GM 3, 160 C or 325 F
  2. Put the butter into a mixing bowl, beat until the butter is soft.
  3. Add the orange zest and beat lightly. Add the sugar and beat again until the mixture is soft and creamy.
  4. Sift the flour (and ground rice) into the bowl and mix quickly and lightly into a smooth paste.
  5. Get out a baking sheet and press the paste onto it, shape it into a 16 cm circle.
  6. Prick holes in it lightly with a fork and mark out 8 wedges using a knife. Sprinkle lightly with extra caster sugar.
  7. Bake in the middle of the oven until it is a pale biscuit colour. Keave to cool for 5 minutes.
  8. Place the shortbread on a cooling rack to cool completely.
  9. Once it is fully cooled, separate the marked out wedges.
