How to make it

  • Preheat oven to GM 3, 160 C or 325 F
  • Put the butter into a mixing bowl, beat until the butter is soft.
  • Add the orange zest and beat lightly. Add the sugar and beat again until the mixture is soft and creamy.
  • Sift the flour (and ground rice) into the bowl and mix quickly and lightly into a smooth paste.
  • Get out a baking sheet and press the paste onto it, shape it into a 16 cm circle.
  • Prick holes in it lightly with a fork and mark out 8 wedges using a knife. Sprinkle lightly with extra caster sugar.
  • Bake in the middle of the oven until it is a pale biscuit colour. Keave to cool for 5 minutes.
  • Place the shortbread on a cooling rack to cool completely.
  • Once it is fully cooled, separate the marked out wedges.
