Orange Shortbread

- 100g softened butter shopping list
- 50g caster sugar shopping list
- Grated zest of 2 oranges shopping list
- 100g plain flour shopping list
- 50g ground rice (optional) shopping list
How to make it
- Preheat oven to GM 3, 160 C or 325 F
- Put the butter into a mixing bowl, beat until the butter is soft.
- Add the orange zest and beat lightly. Add the sugar and beat again until the mixture is soft and creamy.
- Sift the flour (and ground rice) into the bowl and mix quickly and lightly into a smooth paste.
- Get out a baking sheet and press the paste onto it, shape it into a 16 cm circle.
- Prick holes in it lightly with a fork and mark out 8 wedges using a knife. Sprinkle lightly with extra caster sugar.
- Bake in the middle of the oven until it is a pale biscuit colour. Keave to cool for 5 minutes.
- Place the shortbread on a cooling rack to cool completely.
- Once it is fully cooled, separate the marked out wedges.
