Ingredients
  • 7 cups plus 1 tsp. water
  • 2 cups steel cut oats
  • 1 1/2 cups whipping cream
  • 1/2 cup pure maple syrup
  • 2 tsp. corn starch
  • bananas, sliced (optional)

Directions
  1. Boil 7 cups of water and add oats.
  2. Reduce to medium heat and cook until oats are tender but still firm to bite, about 25 minutes
  3. In another pan, bring cream and syrup to boil and reduce heat to med-low and simmer until reduced to 1 2/3 cups, about 20 minutes
  4. Mix cornstarch and 1 tsp. water in small bowl
  5. Whisk into maple mixture and cook until thickened, stirring occasionally
  6. Top oatmeal with sliced bananas and drizzle with maple cream
