A deliciously moist and flavourful cake that is low on the added oil and sugar, but every inch the exotic creation! Made for one of my friend's and loyal customer's birthdays.

Ingredients
  • 1 cup flour
  • 1/2 cup coconut flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cornstarch
  • 1/2 cup sugar
  • 3/4 cup coconut milk
  • 1 cup water
  • 1 tsp vanilla
  • 1 tbsp oil
  • 1/4 cup unsweetened applesauce

Directions
  1. Preheat oven to 350F. Grease and flour a 9" round cake pan.
  2. Sift together the flours, baking powder, salt and cornstarch.
  3. By hand, beat in sugar, coconut milk, water, vanilla, oil, and applesauce.
  4. Bake for 25-30 minutes, until tests done.

You can grind up shredded coconut in a food processor. I found coconut flour at Bulk Barn so I used it lol.
