Blueberry Corn Muffins Recipe
An unusual combination of Blueberries and Cornmeal, but certainly worth a try. Just think of it.. warm Blueberries, Warm Corn Bread slathered with fresh Creamy butter… Oh Yea!

Ingredients
  • 1 c. self-rising cornmeal mix
  • 1 c. self-rising flour
  • 1/3 c. sugar
  • 1 egg, beaten
  • 1 c. milk
  • 1/4 c. vegetable oil
  • 3/4 c. fresh or frozen blueberries

Directions
  1. Preheat oven to 400 degrees.
  2. Coat 10 muffin cups with cooking spray; set aside.
  3. Combine cornmeal mix, flour and sugar in mixing bowl.
  4. Make a well in center.
  5. Combine egg, milk and oil; add to flour mixture, stirring just until moistened.
  6. Fold in blueberries gently.
  7. Fill muffin cups 2/3 full.
  8. Bake for 20 to 25 minutes or until golden brown.
  9. Remove from pan; serve warm.
  10. Makes 10 muffins
