Chicken Grill With Tangy Blueberry Sauce Recipe
This is a great meal to serve you and your honey and another couple. Or go wild and have 2 each! I like to serve this with a green salad, full of bluecheese and a few raspberries and blueberries, dressed with good aged Balsalmic Vinegar.

Ingredients
  • 3 Tbs olive oil
  • 3 Tbs blueberry or raspberry vinegar
  • 1-1/2 tsp lime juice
  • 2 cloves garlic, minced
  • 4 chicken breast halves, skin removed
  • 1 cup blueberries
  • 1 cup pureed raspberries

Directions
  1. In a non-aluminum dish or sturdy plastic zipper-type bag, combine oil, vinegar, lime juice and garlic.
  2. Add chicken, turning to coat all sides.
  3. Marinate, in refrigerator, 1 to 2 hours.
  4. Reserving marinade, remove chicken and pat dry with a
  5. paper towel.
  6. Prepare sauce by combining marinade, blueberries and raspberry
  7. puree in a saucepan.
  8. Place over medium heat and cook 5 to 7 minutes,
  9. stirring occasionally, until slightly thickened.
  10. Remove from heat and set aside.
  11. To grill chicken, place over medium heat,
  12. cooking 8 to 12 minutes per side, until internal temperature reaches 170°.
  13. Serve the chicken with the blueberry-raspberry sauce.
