With this recipe you can use sweet potatoes or pumpkin which ever you prefer. It is a yummy, tongue pleaser. Hope you enjoy it!

Ingredients
  • 1 single pie crust
  • 1 1/2 cups of sweet potato or pumpkin - cooked fresh or canned pur'ee
  • 3/4 cup of evaporated whole milk
  • 2 large egg yolks
  • 1/2 cup firmly packed dark brown sugar
  • 1/4 cup maple syrup
  • 2 tablespoons unsalted butter - at room temperature
  • 2 teaspoons pumpkin pie spice
  • 3 large egg whites

Directions
  1. Preheat the oven to 375 degrees
  2. Place pie crust into a 9 inch pie plate
  3. In a large bowl; beat the sweet potato or pumpkin, milk, egg yolks, sugar, syrup, butter and spice on medium speed
  4. In a clean medium-size bowl; beat the egg whites until stiff, but not dry
  5. Fold egg whites into the mixture
  6. Pour into the crust
  7. Bake for 40 minutes or until a knife inserted in the center comes out clean
  8. Cool on a rack for 1 hour before serving
