Ingredients
  • 1 pound Baby carrots or Sliced Carrots(I prefer baby carrots as they are sweeter)
  • 2 fresh mint leaves
  • 1/3 Cup water
  • Variants:
  • Add 16 ounces frozen peas or
  • Add 16 ounces frozen brocolli florets

Directions
  1. Place one pound baby carrots in a microwaveable casserole dish
  2. Add water and mint
  3. Steam on high with lid for 4 minutes
  4. Stir
  5. Steam on high with lid for 4 minutes
  6. Let rest for 2 minutes
