15 minute skillet cassoulet - weight watchers

- 8 oz chicken sausage, casings removed shopping list
- 1 boneless skinless chicken breast shopping list
- 2 cans cannelini or great northern beans, drained and rinsed shopping list
- 1 medium onion, chopped shopping list
- 1 clove garlic, minced shopping list
- 1/4 tsp dried thyme shopping list
- 2 c low fat, low sodium chicken broth shopping list
- 2T tomato paste shopping list
- 1/2 c plain dry breadcrumbs shopping list
How to make it
- Preheat broiler
- Coat a non-stick, ovenpoof skillet with cooking spray and heat
- Add onion, garlic, and sausage meat & saute until sausage is no longer pink, about 4 minutes
- Add thyme, broth, beans, and tomato paste, simmer 10 minutes
- Sprinkle bread crumbs over the skillet mixture
- Place under broiler until breadcrumbs are browned, about 30 seconds
- 1 3/4 cups per serving
