If you were raised on hush puppies made with a mix of all-purpose flour and cornmeal, you'll be pleasantly surprised by the light texture and bold flavors of this all-cornmeal version. I got this recipe off the internet.

Ingredients
  • 2 1/4 cups self-rising white cornmeal mix
  • 1/2 cup chopped green bell pepper
  • 1/2 medium onion, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 1/2 teaspoon ground black pepper
  • 1 cup buttermilk
  • 2 large eggs
  • Vegetable oil

Directions
  1. Combine first 6 ingredients in a bowl; make a well in center of mixture.
  2. Whisk together buttermilk and eggs; add to dry ingredients, stirring just until moistened. Let mixture stand 30 minutes.
  3. Pour oil to a depth of 2 inches into a Dutch oven; heat to 375°.
  4. Drop batter by heaping teaspoonfuls into hot oil. Fry, in batches, 2 minutes on each side or until golden. Drain on wire racks over paper towels; serve hot.

My deepfryer went bye-bye with Katrina, wish I could try this 'cause it looks yummy.


I love hushpuppies. Know these are especially good with 1/2 teaspoon black pepper, 1/4 teaspoon red pepper and the buttermilk! :)
