How to make it

  • Start with cooking noodles per box directions
  • meanwhile prepare tofu by dividing into 6 equal layers
  • lay tofu between paper towels and pressing to remove excess liquid
  • place tofu in food processor and chop into course chunks
  • in large bowl combine processed tofu and all ingredients except cottage cheese
  • Strain noodles when cooked and cool with cold water
  • Lay out a sheet of parchment paper and individually lay out noodles to fill
  • Place spoon full of cottage cheese on roll and top with heaping spoon full of tofu mixture
  • Add as much of each as desired, careful with adding more cottage cheese it will add to messiness
  • Fill large glass casserole dish with lasagna rolls top with cheese and more parsley
  • Cover with foil
  • Place in 350 degree oven for 45 minutes, remove foil last 15 minutes for cheese to melt
