Tofu Lasagna Rolls Recipe
I was looking for a new way to make lasagna. My family and friends really enjoyed the rolled pasta and it controlled portion sizes for those looking to cut food intake.

Ingredients
  • 12 lasagna noodles
  • 1 (16 oz.) jar tomato sauce
  • 12 oz. package firm tofu
  • 1/2 cup cottage cheese
  • 1/2 cup favorite cheese (plus some for decoration)
  • 1/2 cup mushroom diced
  • 1/2 large onion diced
  • 1 T oregano
  • 1 T basil
  • 1 T parsley ( plus some for decoration)

Directions
  1. Start with cooking noodles per box directions
  2. meanwhile prepare tofu by dividing into 6 equal layers
  3. lay tofu between paper towels and pressing to remove excess liquid
  4. place tofu in food processor and chop into course chunks
  5. in large bowl combine processed tofu and all ingredients except cottage cheese
  6. Strain noodles when cooked and cool with cold water
  7. Lay out a sheet of parchment paper and individually lay out noodles to fill
  8. Place spoon full of cottage cheese on roll and top with heaping spoon full of tofu mixture
  9. Add as much of each as desired, careful with adding more cottage cheese it will add to messiness
  10. Fill large glass casserole dish with lasagna rolls top with cheese and more parsley
  11. Cover with foil
  12. Place in 350 degree oven for 45 minutes, remove foil last 15 minutes for cheese to melt
