Tofu lasagna rolls

- 12 lasagna noodles shopping list
- 1 (16 oz.) jar tomato sauce shopping list
- 12 oz. package firm tofu shopping list
- 1/2 cup cottage cheese shopping list
- 1/2 cup favorite cheese (plus some for decoration) shopping list
- 1/2 cup mushroom diced shopping list
- 1/2 large onion diced shopping list
- 1 T oregano shopping list
- 1 T basil shopping list
- 1 T parsley ( plus some for decoration) shopping list
How to make it
- Start with cooking noodles per box directions
- meanwhile prepare tofu by dividing into 6 equal layers
- lay tofu between paper towels and pressing to remove excess liquid
- place tofu in food processor and chop into course chunks
- in large bowl combine processed tofu and all ingredients except cottage cheese
- Strain noodles when cooked and cool with cold water
- Lay out a sheet of parchment paper and individually lay out noodles to fill
- Place spoon full of cottage cheese on roll and top with heaping spoon full of tofu mixture
- Add as much of each as desired, careful with adding more cottage cheese it will add to messiness
- Fill large glass casserole dish with lasagna rolls top with cheese and more parsley
- Cover with foil
- Place in 350 degree oven for 45 minutes, remove foil last 15 minutes for cheese to melt
