Vegetarian Pizza Stuffing Recipe

Vegetarian Pizza Stuffing Recipe
This was a throw together one night that the kids adored, our 6 year old named it. Can be used as a side dish or a main dish with a vegetable on the side.

Ingredients
  • Stouffers boxed stuffing (use either mushroom, whole wheat, or italian flavor)
  • 1 Can diced tomatoes with basil and oregano
  • 1 box morning star breakfeast sausage patties
  • 1 bag shredded mozzarella
  • 1/2 cup water

Directions
  1. Preheat oven to 350 F
  2. In mix bowl, combine stuffing can of seasoned tomatoes (with juice) and water together until stuffing is moist but not too wet
  3. heat all of the sausage in microwave for 1 minute, should be cool enough to touch yet soft enough to cut
  4. Tear apart or cut sausage in to small pieces (size is done to preference, I usually do it with my hands)
  5. Mix sausage in with stuffing mixture
  6. Press mixture in to square baking dish and cover with as much mozzarella as you like (I use the whole bag), making sure to at least cover all visible stuffing
  7. Bake in oven for 30 min or until cheese is golden and bubbly

Not a huge fan of any stuffing myself, but I know lots of potential lovers for this dish! Thanks!

I cooked this last night and it was really good. I would add garlic, onion, and oregano if making it for just me but my son likes bland. It was good left over too.
