Cucumber And Mint Raita Recipe
A simple raita to accompany any curry or spicy dish to take a bit of the fire out

Ingredients
  • 600ml yoghurt
  • 13cm cucumber, peeled and coarsely grated
  • 2 tablespoons finely chopped, fresh mint
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • Tsp salt
  • Freshly ground black pepper

Directions
  1. Put the yoghurt in a bowl. Beat lightly with a fork or whisk until smooth and creamy.
  2. Add all the other ingredients and mix.
  3. Cover and refrigerate till ready to eat
