Ingredients
  • 1 medium sweet onion
  • 2 cups lump lobster meat, room temperature
  • 1 cup monterey jack cheese, grated
  • 7 tablespoons butter
  • 1/2 - 1 cup breadcrumbs

Directions
  1. chop the onion and sautee in 2 tblsp butter till soft, set aside to cool slightly
  2. grate the jack cheese
  3. lightly mix the breadcrumbs with 4 tablespoons soft butter
  4. butter ramekins
  5. stir warm sauteed onions with lobster meat and jack cheese
  6. place equal amounts of filling in ramekins
  7. top with buttered breadcrumb mixture
  8. bake at 375 degrees till nicely browned and warmed through
