Lobster Casserole

Warm casserole of lobster with jack cheese, and buttered breadcrumbs.
Ingredients
- 1 medium sweet onion shopping list
- 2 cups lump lobster meat, room temperature shopping list
- 1 cup monterey jack cheese, grated shopping list
- 7 tablespoons butter shopping list
- 1/2 - 1 cup breadcrumbs shopping list
How to make it
- chop the onion and sautee in 2 tblsp butter till soft, set aside to cool slightly
- grate the jack cheese
- lightly mix the breadcrumbs with 4 tablespoons soft butter
- butter ramekins
- stir warm sauteed onions with lobster meat and jack cheese
- place equal amounts of filling in ramekins
- top with buttered breadcrumb mixture
- bake at 375 degrees till nicely browned and warmed through
Place in ramekins and bake.
