Porchetta Panini Recipe
An excellent sandwich for the day after you cook porchetta or look for it in delis.

Ingredients
  • 4 slices (½” thick) Italian country bread
  • Olive oil
  • 6 oz thinly sliced porchetta
  • 3 T. olive tapenade
  • 4 slices mozzarella cheese
  • 2 slices onion

Directions
  1. Preheat panini grill.
  2. On 2 slices of bread place one slice of cheese, pork, olive mix, onion and remaining cheese. Top with remaining bread.
  3. Brush outsides lightly with oil.
  4. Place on panini grill. Grill 2 to 3 min or until golden and cheese starts to melt.
