Lime Cream Recipe
This cool creamy sauce is perfect to top off any soup or dish that is hot hot hot. Makes a wonderful soothing contrast.Vegetarian Times Issue: January 1, 2002 p.46 It also makes a great all-purpose condiment to enliven beans and grains.

Ingredients
  • 15 MINUTE CHILL TIME
  • 6 oz. soft silken tofu
  • 2 Tbs. fresh lime juice
  • 2 Tbs. vegetable oil
  • 2 tsp. brown rice vinegar
  • 1 tsp. lime peel
  • 1/4 tsp. white pepper
  • Nutritional Information
  • Per tablespoon:

Directions
  1. Combine tofu, lime juice, oil, vinegar, lime peel, pepper and 1/2 tsp. salt in bowl of food processor.
  2. Process until smooth.
  3. Transfer to small container, and cover.
  4. Refrigerate at least 15 minutes.
