Ingredients
  • Crumb Crust
  • 1-1/2 cups crumbs (I use GF animal crackers)
  • 6 tablespoons butter or margarine at room temperature
  • Filling
  • 1 (8 oz) package cream cheese
  • 2 eggs
  • 1/2 cup sugar
  • 1 tsp. sugar
  • 1 tsp. vanilla

Directions
  1. For Crumb Crust:
  2. Mix the crumbs and butter or margarine in a small bowl. Make sure the crumbs are evenly coated. Press the mixture into a pie plate as even a possible. Bake five minutes or until slightly browned. Or, chill until firm instead of baking.
  3. For Filling:
  4. Preheat oven to 350 degrees. Add all ingredients to blender. (I make this with the Magic Bullet...) Mix until smooth.
  5. Pour the filling into the crumb crust. Bake at 350 degrees for 20-25 minutes (until set). Remove and refrigerate. I like it best served cold!
