Pineapple Upside Down French Toast

- 1/4 cup unsalted butter shopping list
- 1/3 cup dark brown sugar firmly packed shopping list
- 20 ounce can crushed pineapple in juice drained reserving 1/4 cup juice shopping list
- 2 large eggs shopping list
- 1 cup milk shopping list
- 1/4 half and half shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon ground cinnamon shopping list
- 1/4 teaspoon vanilla extract shopping list
- 8 slices French bread 1" thick shopping list
How to make it
- Preheat oven to 400.
- Melt butter over medium heat then stir in sugar until dissolved.
- Add pineapple stirring well to incorporate then set aside.
- Whisk eggs, milk, half and half, pineapple juice, salt, cinnamon and vanilla extract.
- Lightly grease a rectangular baking dish and spread pineapple evenly over bottom.
- Dip bread slices into milk mixture and arrange in one layer on top of pineapple mixture.
- Pour any remaining milk mixture over all.
- Bake in middle of oven for 25 minutes or until bread is golden.
