Pineapple Lemon Bars

- 1 box pineapple flavored cake mix shopping list
- 1 box lemon pudding (the kind you cook) shopping list
- 1 14oz. can sweetened condensed milk shopping list
- 1/2 cup butter (softened) shopping list
- 1/4 cup lemon juice and zest of lemons shopping list
- 2 tablespoons pineapple juice shopping list
- 1/4 cup coconut shopping list
How to make it
- Preheat oven to 350 degrees and grease 10" square pan
- zest and juice lemons (2 large or 4 small)
- In small bowl, mix pudding with condensed milk until smooth and creamy
- Add lemon juice to pudding mix and stir to combine
- In mixing bowl, empty cake mix, add butter, and mix on low speed for 30 seconds
- Add pineapple juice and mix just until moistened and crumbly (don't over mix)
- Reserve 1 cup cake mix batter, press remaining into pan and pat smooth
- Evenly spoon pudding-milk mixture over cake mix
- Add coconut to reserved cake mix
- Crumble over top of pan
- Bake for 25-30 minutes or until golden brown
- Cool in pan and cut into squares
