How to make it

  • Preheat oven to 350 degrees and grease 10" square pan
  • zest and juice lemons (2 large or 4 small)
  • In small bowl, mix pudding with condensed milk until smooth and creamy
  • Add lemon juice to pudding mix and stir to combine
  • In mixing bowl, empty cake mix, add butter, and mix on low speed for 30 seconds
  • Add pineapple juice and mix just until moistened and crumbly (don't over mix)
  • Reserve 1 cup cake mix batter, press remaining into pan and pat smooth
  • Evenly spoon pudding-milk mixture over cake mix
  • Add coconut to reserved cake mix
  • Crumble over top of pan
  • Bake for 25-30 minutes or until golden brown
  • Cool in pan and cut into squares
