Brie Pinwheel Recipe
BRIE PINWHEEL This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bennett Estate in Pilot Point Texas in 1982.

Ingredients
  • 5 pound wheel of ripe brie
  • 1 cup chopped walnuts
  • 1 cup chopped fresh dill
  • 1/2 cup poppy seeds
  • 1 cup chopped watercress
  • 1 cup slivered almonds
  • 1 cup chopped chives

Directions
  1. Cut off top rind of the brie.
  2. Lightly mark the top of the cheese into four pie shaped wedges with a knife.
  3. Divide each wedge into three more wedges again marking lightly.
  4. Sprinkle half the walnuts onto one of the wedge shaped areas and press gently into surface.
  5. Repeat process with half of each of remaining ingredients proceeding in order around wheel.
  6. Allow brie to stand at room temperature for 30 minutes before serving.
