Hominy Stir-Fry Recipe
This is a dish that I grew up on. We always ate it for dinner and leftovers are great for breakfast.

Ingredients
  • 1 can Hominy, drained
  • 4-6 strips of bacon, (reserve about 1 TBSP of grease)
  • 2 eggs, beaten
  • 1/2C cheese, grated
  • salt and pepper to taste

Directions
  1. Cook bacon till crispy. Set aside on a paper towel and pour the fat into a dish, (I use it to fry my morning eggs in yumm!!) or discard all but 1 TBSP. Pour hominy into skillet and fry till heated through. Add the bacon, (chopped into bite size peices) and then add the beaten eggs. Cook till the eggs are just about done then turn off the burner and sprinkle the cheese over the top. Let sit long enough for the cheese to get melty and salt and pepper to taste. I like using a mix of cheddar cheese and pepper jack to give it an extra kick. I also use quite a bit of pepper.
