How to make it

  • Blanch peaches, cool in cold water, peel, pit and chop to measure 3 cups.
  • Blanch tomatoes and cool with cold water, peel, remove seeds and cut into chunks.
  • Finely chop red onions, cilantro, red pepper, garlic, and jalepeno's.
  • In a large cooking pot, combine peaches, tomatoes, onion, Jalapeno peppers, sweet red pepper, cilantro, sugar, garlic, and lime.
  • Bring to a boil, and cook for about 5 minutes, stirring frequently.
  • Adjust seasonings to taste.
  • Remove from heat let cool then place in canning jars or tupperware.
  • Then refridgerate, it tastes even better the next day after the flavors have melded.
  • Serve with corn tortilla chips or even over grilled chicken yum yum.
