Tuna Black And Blue In Lemon And Butter Sauce

- tuna Black & Bluer With lemon & butter Sauce shopping list
- Good for 3 servings shopping list
- Ingredients: shopping list
- 3 pcs tuna Fillet, about 150g each (Ideal size: 1"x2"x3-4") shopping list
- 1 Tbsp Iodized salt shopping list
- 1/2 Tsp ground pepper shopping list
- 1/8 Tsp ground cardamom shopping list
- 1/8 Tsp lemon rind shopping list
- 1/8 Tsp ground coriander shopping list
- 1 Tbsp unsalted butter shopping list
- 1/4 Tsp olive oil shopping list
- For Sauce: shopping list
- 2 Tbsp Sweet White Wine- optional shopping list
- 4 Tbsp unsalted butter shopping list
- 1 tbsp lemon juice shopping list
- 1/8 Tsp lemon rind shopping list
- a dash salt shopping list
- a pinch white pepper fresh cilantro leaves for garnish shopping list
How to make it
- 1.) Pat-dry the tuna.
- 2.) Combine all dried ingredients (salt, pepper, cardamom, coriander, lemon rind). In a hot pan, toast
- dry mixture for a minute. Put in a mixing bowl and let cool down.
- 3) Rub/Sprinkle the dry mixture on both sides of the tuna fillet (just enough to cover each side). Put
- in a sealed container and chill for at least 15 minutes (or you can do this ahead and store in chiller).
- 4.) In a hot skillet, melt butter and drizzle oil. Sear/pan-fry tuna ( thinnest part on pan) for about a minute
- on each side. Put in a plate and do the same with other tuna fillet.
- 5.) After tuna are cooked, (if using wine; deglaze pan with wine, stir, and let boil, remove pan from heat)
- turn off heat; melt butter on the same pan, put lemon, grate lemon rind, and season w/ salt & pepper.
- 6.) Whisk sauce until derive a creamy consistency.
- 7.) Cut tuna half inch crosswise, put some sauce on top. Garnish with cilantro leaves and serve.
