Ingredients
  • Tuna Black & Bluer With Lemon & Butter Sauce
  • Good for 3 servings
  • Ingredients:
  • 3 pcs Tuna Fillet, about 150g each (Ideal size: 1"x2"x3-4")
  • 1 Tbsp Iodized Salt
  • 1/2 Tsp Ground Pepper
  • 1/8 Tsp Ground Cardamom
  • 1/8 Tsp Lemon Rind
  • 1/8 Tsp Ground Coriander
  • 1 Tbsp Unsalted Butter
  • 1/4 Tsp Olive Oil
  • For Sauce:
  • 2 Tbsp Sweet White Wine- optional
  • 4 Tbsp Unsalted butter
  • 1 tbsp Lemon juice
  • 1/8 Tsp Lemon Rind
  • a dash Salt
  • a pinch White Pepper Fresh Cilantro leaves for garnish

Directions
  1. 1.) Pat-dry the tuna.
  2. 2.) Combine all dried ingredients (salt, pepper, cardamom, coriander, lemon rind). In a hot pan, toast
  3. dry mixture for a minute. Put in a mixing bowl and let cool down.
  4. 3) Rub/Sprinkle the dry mixture on both sides of the tuna fillet (just enough to cover each side). Put
  5. in a sealed container and chill for at least 15 minutes (or you can do this ahead and store in chiller).
  6. 4.) In a hot skillet, melt butter and drizzle oil. Sear/pan-fry tuna ( thinnest part on pan) for about a minute
  7. on each side. Put in a plate and do the same with other tuna fillet.
  8. 5.) After tuna are cooked, (if using wine; deglaze pan with wine, stir, and let boil, remove pan from heat)
  9. turn off heat; melt butter on the same pan, put lemon, grate lemon rind, and season w/ salt & pepper.
  10. 6.) Whisk sauce until derive a creamy consistency.
  11. 7.) Cut tuna half inch crosswise, put some sauce on top. Garnish with cilantro leaves and serve.
