Broccolli in balsamic- pesto

- broccoli in Balsamic-pesto sauce shopping list
- Makes 3 servings shopping list
- 300 g broccoli florets shopping list
- 3 small baby carrots, peeled and diced shopping list
- 3 small Jicaima/ turnips, peeled and diced shopping list
- 1 tbsp balsamic vinegar shopping list
- 2 tbsp extra virgin olive oil shopping list
- 1 clove Garlic shopping list
- 1 tbsp Chopped fresh parsley shopping list
- 1/2 tbsp Chopped fresh basil shopping list
- 1 tbsp Chopped cashew nuts & more for garnish shopping list
- dash salt shopping list
- pinch ground black pepper shopping list
How to make it
- Procedure:
- 1.) Blanch all vegetables in hot water for 2-3 minutes. Half cooked is good. Refresh it by running cold
- water. Let rest in chiller.
- 2.) For sauce, put all ingredients in a blender, except oil, whirl it until puree. In low speed, gradually add oil.
- 3.) Put sauce in a mixing bowl and toss the blanched veggies until well covered with sauce.
- - Serve with seared tuna and crusted mashed potato. If you want sprinkle more chopped cashew nuts.
