Broccolli In Balsamic- Pesto Recipe

  • Broccoli in Balsamic-Pesto Sauce
  • Makes 3 servings
  • 300 g Broccoli florets
  • 3 small Baby carrots, peeled and diced
  • 3 small Jicaima/ Turnips, peeled and diced
  • 1 tbsp Balsamic Vinegar
  • 2 tbsp Extra virgin Olive oil
  • 1 clove Garlic
  • 1 tbsp Chopped Fresh Parsley
  • 1/2 tbsp Chopped Fresh Basil
  • 1 tbsp Chopped cashew nuts & more for garnish
  • dash Salt
  • pinch Ground black pepper

Directions
  1. Procedure:
  2. 1.) Blanch all vegetables in hot water for 2-3 minutes. Half cooked is good. Refresh it by running cold
  3. water. Let rest in chiller.
  4. 2.) For sauce, put all ingredients in a blender, except oil, whirl it until puree. In low speed, gradually add oil.
  5. 3.) Put sauce in a mixing bowl and toss the blanched veggies until well covered with sauce.
  6. - Serve with seared tuna and crusted mashed potato. If you want sprinkle more chopped cashew nuts.
