BLACK BEAN FIESTA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Boyd Estate in Dallas, Texas in 1987.

Ingredients
  • 1/2 cup olive oil
  • 6 tablespoons fresh lime juice
  • 1/4 cup chopped cilantro
  • 1 teaspoon ground cumin
  • 4 cups cooked black beans
  • 2 medium red bell peppers diced
  • 1 medium red onion diced
  • 1-1/2 cups cooked corn kernels
  • 2 jalapeno peppers
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. In a large bowl mix everything except beans and vegetables.
  2. Add beans and vegetables and toss well.
  3. Garnish with extra cilantro.
