Ingredients
  • 2 cans Goya black beans
  • 1 large Spanish onion
  • 1/4 cup white zinfandel (or other preferred white)
  • 1/2 package taco seasoning (any preferred brand)
  • 1 can (10 ozs) of Ro Tel tomatoes and green chiles (mild or spicy)
  • 1 teaspoon sugar (or Splenda)
  • 1 pinch oregano
  • salt and pepper (to taste)

Directions
  1. Fine chop onion.
  2. In 3 qt saucepan, heat oil on med heat until "rippled".
  3. Saute onions until caramelized, but not brown.
  4. Add salt, pepper and oregano. (you can always add more later)
  5. Add wine and let cook down for about 5 minutes.
  6. Add Beans and stir.
  7. Add Ro Tel and Mexican seasoning and stir.
  8. Cover and cook for 15 minutes.
  9. Taste to determine whether more salt/pepper is required and add if necessary.
  10. Add sugar (or Splenda).
  11. Cover and cook for 15 minutes.
  12. Serve hot over rice, or as a dip, or with meat...The possibilities are endless.
