Easy One Pot Mild or Spicy Mexican Black Beans

- 2 cans Goya black beans shopping list
- 1 large spanish onion shopping list
- 1/4 cup white zinfandel (or other preferred white) shopping list
- 1/2 package taco seasoning (any preferred brand) shopping list
- 1 can (10 ozs) of Ro Tel tomatoes and green chiles (mild or spicy) shopping list
- 1 teaspoon sugar (or Splenda) shopping list
- 1 pinch oregano shopping list
- salt and pepper (to taste) shopping list
How to make it
- Fine chop onion.
- In 3 qt saucepan, heat oil on med heat until "rippled".
- Saute onions until caramelized, but not brown.
- Add salt, pepper and oregano. (you can always add more later)
- Add wine and let cook down for about 5 minutes.
- Add Beans and stir.
- Add Ro Tel and Mexican seasoning and stir.
- Cover and cook for 15 minutes.
- Taste to determine whether more salt/pepper is required and add if necessary.
- Add sugar (or Splenda).
- Cover and cook for 15 minutes.
- Serve hot over rice, or as a dip, or with meat...The possibilities are endless.
