How to make it

  • Fine chop onion.
  • In 3 qt saucepan, heat oil on med heat until "rippled".
  • Saute onions until caramelized, but not brown.
  • Add salt, pepper and oregano. (you can always add more later)
  • Add wine and let cook down for about 5 minutes.
  • Add Beans and stir.
  • Add Ro Tel and Mexican seasoning and stir.
  • Cover and cook for 15 minutes.
  • Taste to determine whether more salt/pepper is required and add if necessary.
  • Add sugar (or Splenda).
  • Cover and cook for 15 minutes.
  • Serve hot over rice, or as a dip, or with meat...The possibilities are endless.
