How to make it

  • Meatballs:
  • Heat oven to 325 F.
  • Put ground beef, flour and Italian seasoning in zip-loc bag.
  • Seal shut and mix thoroughly.
  • Break off quarter-sized pieces of meat mixture and roll into balls.
  • Place on cookie sheet lined with foil.
  • Bake for 10-15 min. (until meatballs are done)
  • Remove from oven and set aside.
  • Soup:
  • Pour tomatoes and broth into large pot.
  • Add desired measurements of garlic, basil, oregano, salt and pepper.
  • Bring to a boil and then simmer for 5 min.
  • Add macaroni and spinach and simmer for 5 min.
  • Add meatballs and simmer for another 5 min.

    I have a cold now and just ate some of Campbell's Healthy Select Italian Wedding Soup. I added a little Parmesan to the soup and, after looking at the ingredients on the can etc.. I wanted to explore on here to make my own. Yours is one of the best looking I have seen on here.

    Do you puree the tomatoes before you add it to the broth?

    How much minced garlic do you add to the broth and/or the meat mixture for the balls?

    I'm just curious....
