Italian Wedding Soup with homemade baked meatballs really cuts down the fat content. Using basic ingredients and adding own spices cuts down on unwanted sugar intake (i.e. less carbs)

Ingredients
  • 1/2 lb organic ground beef
  • 2 T. organic whole wheat flour
  • Italian seasoning
  • 1 large can of Organic Diced Tomatoes
  • 4 c. organic beef or vegetable broth
  • 1 c. organic macaroni, uncooked
  • 2 c. organic fresh spinach, chopped
  • garlic, minced
  • basil
  • oregano
  • sea salt
  • pepper

Directions
  1. Meatballs:
  2. Heat oven to 325 F.
  3. Put ground beef, flour and Italian seasoning in zip-loc bag.
  4. Seal shut and mix thoroughly.
  5. Break off quarter-sized pieces of meat mixture and roll into balls.
  6. Place on cookie sheet lined with foil.
  7. Bake for 10-15 min. (until meatballs are done)
  8. Remove from oven and set aside.
  9. Soup:
  10. Pour tomatoes and broth into large pot.
  11. Add desired measurements of garlic, basil, oregano, salt and pepper.
  12. Bring to a boil and then simmer for 5 min.
  13. Add macaroni and spinach and simmer for 5 min.
  14. Add meatballs and simmer for another 5 min.
