Sweet Potato Dessert Squares

From Taste of Home magazine. A great way to use leftover sweet potatoes.
Ingredients
- Crust: shopping list
- 1 package yellow cake mix shopping list
- 1/2 cup butter or margarine-melted shopping list
- 1 egg-beaten shopping list
- Filling: shopping list
- 3 cups cold mashed sweet potatoes-without butter or milk shopping list
- 2/3 milk shopping list
- 1/2 cup packed brown sugar shopping list
- 2 eggs-beaten shopping list
- 1 tablespoon pumpkin pie spice shopping list
- Topping: shopping list
- 6 tablespoons butter or margarine shopping list
- 1 cup chopped pecans shopping list
- 1/4 cup sugar shopping list
- 1 teaspoon ground cinnamon shopping list
How to make it
- Set aside 1 cup of cake mix.
- Combine remaining mix with butter and egg.
- Spread into a greased 9" x 13" baking dish.
- Whisk together filling ingredients until smooth. Pour over crust.
- For topping,cut butter into reserved cake mix until crumbly. Stir in pecans,sugar,and cinnamon. Sprinkle over filling.
- Bake at 350 degrees for 60-65 minutes or until inserted knife comes out clean.
- Cool. Garnish with pecan halves is desired and serve with whipped cream.
