Real Irish Stew

- 1.5 lbs lamb or mutton (my mother prefers mutton) shopping list
- 8 potatos shopping list
- 4 carrots chopped shopping list
- 2 parsnips chopped shopping list
- 1 turnip chopped shopping list
- 2 onions diced shopping list
- 1 sprig of parsley and thyme shopping list
- 2 pints of beef stock shopping list
- 1 glass of guinness shopping list
- 1 pkt of oxtail soup. shopping list
How to make it
- Brown the onions and the lamb in a large heavy based saucepan.
- Add in the hot beef stock.
- Add in carrots, parsnips, turnip and herbs.
- Cook on a low heat for aprox 1 hr.
- Add in potatos and guinness and cook for a further 30 minutes.
- Add in oxtail soup at about 10 minutes from the end of cooking.
- Stir gently. Serve with nice warm brown irish soda bread.
