Real Irish Stew Recipe
This is my moms original irish recipe. And we all grew up big and strong on it!

Ingredients
  • 1.5 lbs lamb or mutton (my mother prefers mutton)
  • 8 potatos
  • 4 carrots chopped
  • 2 parsnips chopped
  • 1 turnip chopped
  • 2 onions diced
  • 1 sprig of parsley and thyme
  • 2 pints of beef stock
  • 1 glass of guinness
  • 1 pkt of oxtail soup.

Directions
  1. Brown the onions and the lamb in a large heavy based saucepan.
  2. Add in the hot beef stock.
  3. Add in carrots, parsnips, turnip and herbs.
  4. Cook on a low heat for aprox 1 hr.
  5. Add in potatos and guinness and cook for a further 30 minutes.
  6. Add in oxtail soup at about 10 minutes from the end of cooking.
  7. Stir gently. Serve with nice warm brown irish soda bread.
