Taco Quiche With Avocado Salsa Recipe
Easy. Perfect for brunch, a luncheon, or supper. Just add a bowl of chips. Topped with a delicious avocado salsa, it's a colorful presentation.

Ingredients
  • 1 ready to bake pastry shell, large and deep dish
  • 1 tablespoon oil
  • 1/4 cup chopped onion
  • 1 large clove garlic, minced
  • 1/2 pound lean ground beef
  • 2 teaspoons chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt (divided)
  • 1/8 teaspoon cayenne pepper
  • 1 tablespoon ketchup
  • Dash Tabasco
  • 1-1/2 cups half and half
  • 1 small can green chilies
  • 1-1/2 cups shredded mild Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • SALSA
  • 1 avocado, peeled and diced
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 2 green onions, chopped fine
  • 1 medium tomato or 2-3 Roma tomatoes, chopped

Directions
  1. Bake pastry shell for 7 minutes at 400 degrees
  2. In skillet, heat oil and saute' onion and garlic until soft
  3. Stir in the ground beef, chili powder, oregano, *1/4* teaspoon salt,
  4. cayenne pepper, ketchup and Tabasco sauce
  5. Brown the meat mixture, drain well
  6. Spoon into baked pie shell
  7. In bowl, beat eggs, mix with half and half, *1/4* teaspoon salt, chilies and cheeses
  8. Pour mixture over meat
  9. Bake at 400 degrees for 40 minutes until center is set and a snife comes out clean
  10. Let rest about 15 minutes before serving
  11. SALSA
  12. In bowl, combine all listed ingredients
  13. Top with salsa before serving
