Chocolate Capuccino Cheesecake

- Crust: shopping list
- 1 cup chocolate cookie crumbs shopping list
- 1/4 cup butter-melted shopping list
- 2 tablespoons white sugar shopping list
- 1/4 teaspoon ground cinnamon shopping list
- Filling: shopping list
- 3 8oz packages cream cheese-softened shopping list
- 1 cup white sugar shopping list
- 3 eggs shopping list
- 8 1oz squares semisweet chocolate shopping list
- 2 tablespoon whipping cream shopping list
- 1 cup sour cream shopping list
- 2 teaspoons instant coffee dissolved in 1/4 cup hot water shopping list
- 1/4 teaspoon salt shopping list
- 1/4 cup coffee liqueur shopping list
- 2 teaspoon vanilla extract shopping list
- Topping: shopping list
- 1 cup heavy whipping cream shopping list
- 2 tablespoon confectioners sugar shopping list
- 2 tablespoons coffee liqueur shopping list
How to make it
- Preheat oven to 350 degrees.
- Butter a 9"springform pan.
- Combine cookie crumbs,melted butter,2 tablespoon sugar,and cinnamon.
- Mix well and press into prepared pan. Set aside.
- In a medium sized mixing bowl,beat softened cream cheese until smooth.
- Gradually add one cup white sugar,mixing until well blended.
- Add eggs,one at a time. Beat at low speed after each addition until very smooth.
- Melt chocolate with 2 tablespoons whipping cream. Stir until smooth.
- Add chocolate to cream cheese mixture and blend well.
- Stir in sour cream,salt,coffee,coffee liqueur,and vanilla. Mix well.
- Pour mixture into pan.
- Bake in center of oven for 45 minutes. Do not overbake. Center will be soft but will firm up when chilled.
- Turn oven off and leave cheesecake inside for 45 minutes with the door cracked.
- Refrigerate at least 12 hours.
- Topping:
- Beat whipped cream until soft peaks form.
- Then beat in confectioners' sugar and liqueur.
- Spread over chilled cheesecake.
