How to make it

  • Preheat oven to 350 degrees.
  • Butter a 9"springform pan.
  • Combine cookie crumbs,melted butter,2 tablespoon sugar,and cinnamon.
  • Mix well and press into prepared pan. Set aside.
  • In a medium sized mixing bowl,beat softened cream cheese until smooth.
  • Gradually add one cup white sugar,mixing until well blended.
  • Add eggs,one at a time. Beat at low speed after each addition until very smooth.
  • Melt chocolate with 2 tablespoons whipping cream. Stir until smooth.
  • Add chocolate to cream cheese mixture and blend well.
  • Stir in sour cream,salt,coffee,coffee liqueur,and vanilla. Mix well.
  • Pour mixture into pan.
  • Bake in center of oven for 45 minutes. Do not overbake. Center will be soft but will firm up when chilled.
  • Turn oven off and leave cheesecake inside for 45 minutes with the door cracked.
  • Refrigerate at least 12 hours.
  • Topping:
  • Beat whipped cream until soft peaks form.
  • Then beat in confectioners' sugar and liqueur.
  • Spread over chilled cheesecake.
