Ingredients
  • 2/3 cup sliced carrots
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 3 cups fat-free broth (beef, chicken, or vegetable)
  • 1 1/2 cups diced green cabbage
  • 1/2 cup green beans
  • 1 T tomato paste
  • 1 large tomato, diced
  • 2 stalks celery, diced
  • 1/2 cup diced zucchini
  • 1/2 t. dried basil
  • 1/3 t. dried oregano
  • 1/4 t. salt

Directions
  1. In large saucepan that has be sprayed with pam, saute the carrot, onion, garlic and celery about 5 mintues.
  2. Add broth.
  3. Add cabbage, beans tomato paste, tomato, basil, oregano and salt
  4. Bring to a boil.
  5. Lower heat and simmer 20 minutes, or until beans are tender.
  6. Stir in zucchini and heat for 5 minutes more.
  7. Serve hot.
