Garden Vegetable Soup

- 2/3 cup sliced carrots shopping list
- 1/2 cup diced onions shopping list
- 2 cloves garlic, minced shopping list
- 3 cups fat-free broth (beef, chicken, or vegetable) shopping list
- 1 1/2 cups diced green cabbage shopping list
- 1/2 cup green beans shopping list
- 1 T tomato paste shopping list
- 1 large tomato, diced shopping list
- 2 stalks celery, diced shopping list
- 1/2 cup diced zucchini shopping list
- 1/2 t. dried basil shopping list
- 1/3 t. dried oregano shopping list
- 1/4 t. salt shopping list
How to make it
- In large saucepan that has be sprayed with pam, saute the carrot, onion, garlic and celery about 5 mintues.
- Add broth.
- Add cabbage, beans tomato paste, tomato, basil, oregano and salt
- Bring to a boil.
- Lower heat and simmer 20 minutes, or until beans are tender.
- Stir in zucchini and heat for 5 minutes more.
- Serve hot.
