Stovetop Jambalaya Recipe
This is a variation on Jambalaya that I have made in the oven and in the crock pot but it takes much less time and preparation. Filling and warm for cold winter evenings there is lots to go around.

Ingredients
  • 1 1/2 lbs sausage (hot italian is what I use)
  • 2 28 oz tins diced tomatoes
  • 2 cups frozen peas
  • 2 cups frozen corn
  • 28 oz water
  • 1/4 cup One-step Cajun seasoning
  • 1 to 1 1/2 tins (use the tomato tins) uncooked white rice (I use basmati)

Directions
  1. Slice the sausage into 1" rounds.
  2. Bring tomatoes, sausage, peas and corn to a boil and cook until sausage is partially done.
  3. Add seasoning and stir to mix thorougly.
  4. Add rice, reduce heat, cover and simmer for 30-35 minutes.
  5. Stir occasionally to prevent sticking.
  6. Serve hot with hot pepper sauce to season to taste.
