How to make it

  • Boil the rice in abundant lightly salted water until it reaches the chewy al dente stage. While this is happening, crush the cloves of garlic and whisk the yolks in a bowl with them.
  • When the rice is done drain it, and stir it immediately into egg yolks -- the heat of the rice will cook them -- seasoning everything to taste with salt, pepper, and a drizzle of olive oil. Finally, add the minced parsley and grated cheese mixing well to incorporate. Serve Immediately.
