Garlic And Parmesan Risotto Recipe
This is a very simple and tasty version of a classic risotto

Ingredients
  • 1 1/2 cups rice (est, though any non-parboiled will work)
  • 5 cloves garlic
  • A small bunch of parsley, minced
  • 3 egg yolks
  • Olive oil
  • Salt and pepper to taste
  • 1 c Freshly grated Parmigiano

Directions
  1. Boil the rice in abundant lightly salted water until it reaches the chewy al dente stage. While this is happening, crush the cloves of garlic and whisk the yolks in a bowl with them.
  2. When the rice is done drain it, and stir it immediately into egg yolks -- the heat of the rice will cook them -- seasoning everything to taste with salt, pepper, and a drizzle of olive oil. Finally, add the minced parsley and grated cheese mixing well to incorporate. Serve Immediately.
