Garlic and Parmesan Risotto

- 1 1/2 cups rice (est, though any non-parboiled will work) shopping list
- 5 cloves garlic shopping list
- A small bunch of parsley, minced shopping list
- 3 egg yolks shopping list
- olive oil shopping list
- salt and pepper to taste shopping list
- 1 c Freshly grated parmigiano shopping list
How to make it
- Boil the rice in abundant lightly salted water until it reaches the chewy al dente stage. While this is happening, crush the cloves of garlic and whisk the yolks in a bowl with them.
- When the rice is done drain it, and stir it immediately into egg yolks -- the heat of the rice will cook them -- seasoning everything to taste with salt, pepper, and a drizzle of olive oil. Finally, add the minced parsley and grated cheese mixing well to incorporate. Serve Immediately.
