How to make it

  • Bring sugar and water to a boil. Reduce heat and simmer uncovered about 4 minutes. Remove from heat and add mint. Cover and steep at least 20 minutes. Strain and discard mint. Chill until needed. (Steeping and chilling time not included.)
  • Combine fruits (having coated in lemon water to prevent browning) in a large bowl.
  • Stir yogurt into the mint syrup to blend well.
  • Pour over the fruit and toss to coat.
  • I serve this in Sundae glasses and it's gorgeous, with a dollop of dressing on top.
