Smoked Salmon And Salsa Recipe
A brilliant starter or main, depending on the size of the salmon fillets

Ingredients
  • SMOKED SALMON
  • wood chips
  • fresh herbs
  • Atlantic salmon fillets
  • salt
  • chilli oil
  • SALSA
  • Tomatoes, deseeded and roughly sliced
  • Cucumber, skinned and diced
  • Lime juice
  • Chillies, 3 different varieties, chopped
  • Spring onion, minced whites, greens finely chopped
  • salt
  • avocado diced (with lime juice to dress and stop browning)
  • Good quality olive oil and extra lime juice

Directions
  1. SMOKED SALMON
  2. In a baking pan with a rack, add wood chips and herbs of choice under the rack
  3. Rub the salmon fillets with salt and chilli oil and place on top of rack in baking pan
  4. Cover tightly and cook on oven top on medium high for 5-6 minutes
  5. SALSA
  6. Combine all ingredients and dress with lime and olive oil
  7. PRESENTATION (AS A STACK)
  8. Salsa for base
  9. Smoked salmon
  10. Salsa on top
