  • Good Grade Beef

Directions
  1. Leave the steaks set for 12 hours at about 75 degrees room temperature or a shorter time at a hotter temperature or a longer time at a cooler temperature.Aging beef is as simple as that.
  2. Actually the time you leave it out is not important ,just leave it out until it begins to turn a darker red and it is really tender and aged.
  3. The toughest old bull steak left to age like this will be as tender as any that you have ever eaten.

I age mine uncovered in the refrig for 3 days and it works the same way.Will have to try it your way for when I don't have the time. Thanks....Bob


When we lived up north.. and had a steer butchered.. they hung it for 2 weeks... In a walk in.. I notice the difference in beef here... will have to give it a try..


I know alot of people don't buy the darker steaks but, they are so good and definately tender.
