Ingredients
  • 1 good sized chicken
  • 1/2 pound bacon
  • 2 large onions
  • 4 pounds potatoes
  • 5 cans lima beans or butter beans,drained
  • 2 cans whole kernel corn,drained
  • 5 cans of tomatoes,not drained
  • 1/2 teaspoon red pepper
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoon salt

Directions
  1. Place the chicken in pressure cooker,cook until the meat falls off the bones
  2. Break up the chicken in bite size pieces and place back into cooker
  3. Do not cook chicken any further
  4. Peel the potatoes and cook then in seperate pan until done
  5. Drain,water from the potatoes and mash
  6. Dice the onions and place in the presure cooker with the chicken
  7. Add the drained,lima beans,drained whole kernel corn,and the undrained tomatoes.
  8. With lid off,bring to a slow boil over medium heat.
  9. Remove from stove.
  10. Cut up the bacon and place in pan in oven cook until done.
  11. Place the cooked bacon in the pot with the chicken and other ingredients,add salt and the two peppers
  12. Now put in the mashed potatoes and let it slowly boil over medium heat for about 45 minutes or until thick,Stir frequently to keep from burning.
  13. Serve with bread and butter
