Tomato Jam Recipe
One nice way to use the over abundance of tomatoes this summer.

Ingredients
  • 4 and 1/2 pounds ripe tomatoes,peeled(pour almost boiling water over tomatoes,roll them around then take out,the skin should come right off)
  • 4 and1/2 cups sugar
  • 1 Tablesp. Cinnamon
  • 1 and1/2 cup vinegar
  • 1/2 teasp. allspice
  • 1 teasp. cloves

Directions
  1. Scald and peel tomatoes,then quarter them,Place in cooking pot and add sugar,vinegar and spices.Cook Slowly till thickenened,watch as not ot scorch.Put up in canning jars.Place in hot water bath,Take out check for seal,when cool.

  3. If you would like the American Indian Method of planting tomatoes and ,the Indian method of preserving them,please feel free to ask.

This sounds delicious! Can't wait to try when good local tomatoes come in this summer. Don't want to ruin it with cardboard grocery store tomatoes!
