SALAD BAR CHOIOCE

- 8 oz. Fresh Runner beans, cut diagonally across shopping list
- salt shopping list
- 2 turnips, pared and thinly sliced shopping list
- 1/2 small white cabbage, shredded shopping list
- 1/2 small red cabbage, shredded shopping list
- 1/2 small cauliflower, cut into florets shopping list
- 2 red peppers, sliced thinly shopping list
- 2 green peppers, s;lliced thinly shopping list
- 5 young leeks or spring onions sliced shopping list
- 1 Bunch radishes, slliced shopping list
- 4 carrots shredded shopping list
- 4 Sticks celery, thinly sliced shopping list
- 4 tomatoes, cut into wedges shopping list
- 1 Head of lettuce, shredded - I use iceberg lettuce shopping list
- 1/4 cucumber, thinly sliced shopping list
How to make it
- Boil the Runner Beans in lightly salted water for 5 to 10 minutes.
- Drain under running cold water, then set aside.
- Arrange the prepared vegetables attractively in a serving dish or dishes.
- Cover with plastic film and chill until ready to serve.
- This is good served with Cottage Cheese or a selection of Cold Meats, if liked.
- VARIATIONS
- For added flavour, serve bowls of crumbled crispy bacon, garlic croutons or toasted sunflower seeds to sprinkle over the top of the salad.
- There are only 150 Calories per Serving, so good for those on a Diet. Also good for those watching their 5 a Day intake of fruit and Vegetables!!
- You could, if desired, use a Dressing of your choice.
