How to make it

  • Boil the Runner Beans in lightly salted water for 5 to 10 minutes.
  • Drain under running cold water, then set aside.
  • Arrange the prepared vegetables attractively in a serving dish or dishes.
  • Cover with plastic film and chill until ready to serve.
  • This is good served with Cottage Cheese or a selection of Cold Meats, if liked.
  • VARIATIONS
  • For added flavour, serve bowls of crumbled crispy bacon, garlic croutons or toasted sunflower seeds to sprinkle over the top of the salad.
  • There are only 150 Calories per Serving, so good for those on a Diet. Also good for those watching their 5 a Day intake of fruit and Vegetables!!
  • You could, if desired, use a Dressing of your choice.
