Taco stuffed Peppers

- 4 med green peppers shopping list
- 1/3 c uncooked orzo shopping list
- 3/4 pound lean ground beef shopping list
- 1/4 pound pork sausage shopping list
- 3 tbs chopped onion shopping list
- 2 plum tomatoes seeded and chopped shopping list
- 2 tbs taco seasoning shopping list
- 1 garlic clove minced shopping list
- 3/4 c shredded cheddar cheese shopping list
How to make it
- Cut tops off peppers and remove seeds. In a large kettle, cook peppers in boiling water for 3-5 mins. Drain and rinse in cold water; set aside.
- Cook orzo according to package directions. Meanwhile, in a large nonstick skillet, cook the beef, sausage and onion over medium heat until meat is no longer pink; drain. Reduce heat to low. Add the tomatoes, taco seasoning and garlic. Cook uncovered, for 10 mins, stirring occasionally.
- Drain orzo; stir into meat mixture. Add 1/2 c cheese. Spoon intopeppers. Place in an 11 x 7 baking dish coated with nonstick spray.
- Cover and back 350 for 10 mins. Uncover; sprinkle with remaining cheese. Bake 5 mins or until cheese is melted.
