Baked Potatoes Stuffed With Crabmeat Recipe

Ingredients
  • 6 baking potatoes
  • 6 ounces crab meat
  • 1/2 cup half & half
  • 2 tablespoons butter, melted
  • salt, to taste
  • cayenne pepper, to taste
  • 1 onion, grated
  • 8 ounces Cheddar cheese, freshly grated

Directions
  1. Preheat oven to 375°. Pierce each potato several times with a fork and bake for 45 to 60 minutes. Remove potatoes from oven and cool slightly. Cut each in half and scoop out insides, leaving skins intact. Place potato filling in a medium mixing bowl; set potato shells aside.
  2. Reduce oven to 350°. To the potato filling, add crabmeat, half & half, butter, salt, cayenne pepper and onion and whip until smooth. Return potato mixture to potato shells and top with cheese. Bake for 30 minutes or until cheese is bubbly
