Super easy, super fast stir-fry dish. Goes nicely with some crusty bread and a light salad with asian sesame dressing. Can adjust the "hot factor" and type of seafood to your tastes.

Ingredients
  • 2 pkgs ramen noodles (Oriental Flavor)
  • 1 T. oil
  • 3/4 lb medium sized raw shrimp
  • 1 c sliced green onions
  • 1 1/2 T fresh lemon juice
  • 1 - 2 tsp fresh ground chili paste
  • 1 T. toasted sesame seeds
  • sesame oil

Directions
  1. Cook the noodles from the two packages of ramen in 3 cups of boiling water for 2 to 3 min; rinse with cold water and drain.
  2. Meanwhile, heat oil in a wok or skillet.
  3. Stir-fry the shrimp and the green onions till shrimp are pink.
  4. Add the cooked noodles, the seasonings from the flavor packet, the lemon juice and chili paste; toss and heat through.
  5. Serve topped with toasted sesame seeds a drizzle of sesame oil
  6. Garnish with lemon wedges.
