How to make it

  • Fry the onion with a bit of oil until it's golden brown. Add the rest of the ingredients apart from the tomatoes and basil and let simmer for 15-20mins. In the end spice with basil. Prepare the cheese sauce (see recipe underneath) and build up the lasagna; On the bottom of an oiled oven dish add a layer of courgette sauce, then a layers of lasagna sheets. On top of the sheets add a layer of cheese sauce and again a layer of courgette sauce. Carry on until you've only got just enough for one more layer of cheese sauce. The last layer would be to put the sliced tomatoes on top of the lasagna sheets and on top last layer of cheese sauce and some grated cheese. Set the oven to 225ÂșC and put the lasagna in straight away, without pre-heating. Leave it there for 40-45 mins, then switch the oven off and leave the lasagna in for 10 more minutes. Serve with a fresh salad.
  • Cheese sauce:
  • Whisk cream, milk and flour in a pot into a smooth mixture. Add water, still whisking. Move to a moderate stove and add soft cheese stirring all the time until the sauce starts to thicken. Then add grated cheese and let it melt in the sauce. Spice with pepper and nutmeg
