Mexican Meat Cups Recipe
This is cute for when company comes over... you can serve it buffet style and let each person fill their own cup...I got this out of a magazine....years ago... dont remember which one..

Ingredients
  • 1 package (10) refrigerated biscuits
  • 1 pound lean ground beef
  • 1 (15 1/2 oz) can chili beans
  • 1 (15 1/4 oz) can Mexican-style sandwich sauce
  • 1/4 cup water
  • 1 cup shredded cheddar cheese
  • Shredded lettuce
  • Chopped tomato
  • Chopped green onion

Directions
  1. Roll or pat each biscuit to a 3 1/2 - 4 inch circle; fit over backs of well greased muffin pans to make cups... Bake in a 400 degree oven 8 to 9 minutes.
  2. Brown meat; drain off fat.
  3. Stir in beans, sandwich sauce, and water; heat to boiling.
  4. With metal spatula, remove biscuits from pans.
  5. Fill with meat sauce.
  6. Top with cheese, lettuce, tomato and green onion.
  7. You could also use taco seasoning to flavor meat or use bbq of any kind shredded and use coleslaw on top... Many different ways to do this dish.
