Insalata Caprese S Un Bastone - Capri Salad On A Stick

- 4 skewers, approximately 7" to 9" long shopping list
- 20 grape tomatoes, or if you can't find those, use cherry tomatoes shopping list
- 1 package of mozzarella cheese, the solid kind that's packed in water, not the pizza kind. shopping list
- a large bunch of fresh basil leaves, washed shopping list
- The best extra-virgin olive oil you can buy shopping list
- freshly-ground black pepper shopping list
- salt, if desired shopping list
How to make it
- Cut the Mozzarella into little squares - you will need 20 of them, all about the same size as the tomatoes.
- Wash the tomatoes.
- On a skewer, thread a tomato, a basil leaf, and then a cheese cube, and continue that way until the skewer contains 5 tomatoes and 5 cheese cubes. Finish it off with one more basil leaf.
- Continue to fill all the skewers the same way.
- Lay the skewers on a serving plate and sprinkle with salt and pepper and then drizzle a bit of olive oil over the whole thing.
- If you want a little different flavor, you could add jumbo sized black olives of the type you like best to the skewers, but be sure the olives are pitted.
