Chicken And Veggie Pita Pizzas Recipe
This is my version of a veggie pita pizza a friend once ordered at a local restaurant. I thought the addition of grilled chicken breast was just what it needed. It makes a healthy and satisfying lunch.

Ingredients
  • 2 Whole wheat pitas
  • *1 c. chopped or shredded vegetables of choice ( any combination of broccoli, carrots, onion, peppers, mushrooms, etc.)
  • 1 grilled chicken breast, chopped
  • 3-4 tbsp. creamy dressing of choice - e.g. Three Cheese Ranch, Ranch, or Caesar
  • 1/2 - 3/4 c. shredded mozzarella cheese (or a mix of cheddar and mozzarella)

Directions
  1. Spread dressing over each pita. Arrange veggies over top. Top with chicken, and follow with shredded mozzarella cheese. Bake at 350 degrees for about 10 minutes. Cheese should be melted, and pita should be hot.
  2. * Add more vegetables as desired.
