Chewy pineapple-coconut bars on a cookie crust

Ingredients
- 2 T butter, melted
- 3 T sugar
- 1 egg
- 1 c flour
- 1 t baking powder
- 2 cans (8 oz each) unsweetened crushed pineapple, drained
- TOPPING
- 1 T butter, melted
- 1 c sugar
- 2 eggs
- 2 c flaked coconut
Directions
- Ina bowl, beat butter and sugar. Beat in egg. Combine flour and baking powder; stir into egg mixture. Press into a 9" square baking pan coated with cooking spray. Spread the pineapple over crust; set aside.
- For topping, in a bowl, beat butter and sugar. Beat in eggs. Stir in coconut. Spread over pineapple. Bake at 325 for 35 - 40 minutes or till golden brown. Cool in pan on wire rack. Cut into bars.
