How to make it

  • Ina bowl, beat butter and sugar. Beat in egg. Combine flour and baking powder; stir into egg mixture. Press into a 9" square baking pan coated with cooking spray. Spread the pineapple over crust; set aside.
  • For topping, in a bowl, beat butter and sugar. Beat in eggs. Stir in coconut. Spread over pineapple. Bake at 325 for 35 - 40 minutes or till golden brown. Cool in pan on wire rack. Cut into bars.

    This is fantastic! It wasn't what I expected but thankfully it turned out delicious anyways! The base is more cake like and the topping forms a crisp thin layer like a coconut macaroon. It's a little crumbly and hard to transport so it wouldn't be something I'd bring to a pot luck per say. But making it at home for family or friends would be great--you might not want to share them anyways! ;)
