How to make it

  • Wash and dry spinach leaves if necessary
  • slice the bacon into little bits and cook until crispy, keeping about 4 or 5 tbs of the fat in the pan
  • remove the bacon and add the garlic, saute until fragrant.
  • whisk in the balsamic vinegar, picking up all the bits from the bottom of the pan, bring to a steady boil and let reduce for 5-10 mins. Season with salt and pepper.
  • While the bacon is cooking arrange the salad plates by place a great big handful of spinach on each.
  • Sliced the hard boiled egg into four wedges and place around the plates
  • Add some grape tomatoes and crutons
  • Drizzle the hot dressing over the spinach right before serving.
