Easy Spinach Salad

- 1 big bag spinach or two small bags baby spinach leaves shopping list
- 1/2 lb bacon shopping list
- about 1 cup balsamic vinegar shopping list
- 1 garlic clove, minced shopping list
- 8 eggs, hard boiled shopping list
- 1 pint grape tomatoes shopping list
- crutons shopping list
How to make it
- Wash and dry spinach leaves if necessary
- slice the bacon into little bits and cook until crispy, keeping about 4 or 5 tbs of the fat in the pan
- remove the bacon and add the garlic, saute until fragrant.
- whisk in the balsamic vinegar, picking up all the bits from the bottom of the pan, bring to a steady boil and let reduce for 5-10 mins. Season with salt and pepper.
- While the bacon is cooking arrange the salad plates by place a great big handful of spinach on each.
- Sliced the hard boiled egg into four wedges and place around the plates
- Add some grape tomatoes and crutons
- Drizzle the hot dressing over the spinach right before serving.
