Chicken Enchilada casserole

- boneless, skinless cut into bite size pieces shopping list
- small onion chopped shopping list
- green chilis diced (to taste) shopping list
- 1 teaspoon of cumin shopping list
- 2 cans cream of chicken soup shopping list
- 1 cup milk shopping list
- 1 cup sour cream shopping list
- soft tortillas shopping list
- shredded cheese (cheddar, pepper jack, or your choice) shopping list
How to make it
- Saute chicken, onion, peppers until cooked thru.
- Mix in cumin, soup, milk and sour cream
- spray 13x9x2 pan with cooking spray
- place a layer of tortillas in pan
- spoon half of chicken mixture on top
- Sprinkle with cheese
- add layer of tortillas
- spoon remaining chicken over top
- top with remaining tortillas and cheese
- Bake at 350 for 30 minutes covered

I made this last night. It was so wonderful! However, I did not have a can of green chili at the house, so I used rotel. I could have eaten the whole pan. It was wonderful!
