Chicken Enchilada Casserole Recipe
This is the same great taste of chicken enchiladas without all the work. Perfect for easy to prepare weeknight meal

Ingredients
  • boneless, skinless cut into bite size pieces
  • small onion chopped
  • green chilis diced (to taste)
  • 1 teaspoon of cumin
  • 2 cans cream of chicken soup
  • 1 cup milk
  • 1 cup sour cream
  • soft tortillas
  • shredded cheese (cheddar, pepper jack, or your choice)

Directions
  1. Saute chicken, onion, peppers until cooked thru.
  2. Mix in cumin, soup, milk and sour cream
  3. spray 13x9x2 pan with cooking spray
  4. place a layer of tortillas in pan
  5. spoon half of chicken mixture on top
  6. Sprinkle with cheese
  7. add layer of tortillas
  8. spoon remaining chicken over top
  9. top with remaining tortillas and cheese
  10. Bake at 350 for 30 minutes covered

I made this last night. It was so wonderful! However, I did not have a can of green chili at the house, so I used rotel. I could have eaten the whole pan. It was wonderful!
